新芽が一気に動き出しました🌱
今日は茶畑に遮光ネットを被せる「被覆作業」をします。

-----なぜこの作業を行うのか？
それは、日光を遮断することでテアニン（旨味）がカテキン（渋味）に変化するのを抑え、甘く濃厚で、鮮やかな緑色を持つお茶を作ることができるからです。

今年もいいお茶が出来そうです🍵

The new shoots are bursting to life all at once! 🌱 Today we're covering the tea fields with shading nets — a process called kabuse (covered cultivation).

Why do we do this? By blocking out sunlight, we prevent theanine (the amino acid behind umami and sweetness) from converting into catechins (which create bitterness). The result is tea that's sweeter, richer, and beautifully vibrant green. 🍵
